As usual with our sweet Marsala casks, maturation is quite a gamble. While we know that certain malts are perfectly suited to Marsala, the result in terms of influence from the wine may vary quite a lot in a short time. We decided to blend two casks from this batch, because the sweetly fruity intensity of one perfectly complemented the more restrained minerality of the other: the result is exactly how we like, with a generous presence of the sunny and raisiny Sicilian wine but retaining most of the mineral, malty and waxy character of the whisky. Nutty but on the sweet side, with a touch of astringency, it is the perfect whisky for dessert or (for the adventurous palates) to match some blue cheese.
